Tilston Point Blue Cheese is an American cheese made in the style of the best British blues, and is actually named in honor of Stilton (Tilston, rearranged, spells Stilton)! Located in Mineral Point, Wisconsin, World Champion Cheesemaker Hook's Cheese Company started in the 1970's In the late 1990's they began crafting blues, and in 2004 created Tilston Point, their sole washed-rind cow’s milk blue. It is aged 10 months to a year, making a dryer and more intense cheese. Milk for production comes from several small, local dairy farms near Mineral Point. and the cows are all raised sustainably and without rBGH.
