Marieke Aged Gouda

A firm and crystallized texture makes this true farmstead Gouda sweetly aged. Complex notes of toasted nuts finish out the profiles of this lively cheese. It's made using fresh raw milk from the family farm. Each wheel is handcrafted with the finest Old World techniques and ages the Gouda to perfection on Dutch Pine Planks. Pair with fig preserves and sturdy crackers along with a Stout beer or any red wine.

Dill Jack

Monterey Jack, sometimes shortened to Jack, is an American white, semi-hard cheese made using cow's milk. It is noted for its mild flavor and slight sweetness. We add fresh dill to enhance the outcome. Maybe cubed, sliced, or shredded also melts wonderfully on anything from eggs to your burgers.

8 Year Sharp Cheddar

The terms sharp and mild refer to the flavor of cheddar cheese. The sharper the cheddar, the more tangy and complex it will taste. A Cabernet Sauvignon is the best-aged Cheddar wine pairing. The strong and sharp flavor of Cheddar matches well with the tannic and fruity taste of Cabernet Sauvignon.

Applewood Smoked Gouda

In Wisconsin, we do the Dutch proud with our cultured, buttermilk-rich gouda. It’s sometimes young, sweet, and springy, and other times aged, complex, and slightly crystalline. Holland-born, creamy, washed-curd gouda is a slightly sweet and incredibly versatile cheese. Wisconsin-born-and-bred gouda is perfect for nearly any role you want it to play, whether it be a starring role on a cheese board or as a supporting character as, say, a casserole ingredient. We then smoke the wheels in our cold smoker in Applewood giving it the final quality of perfection before you consume.

Raspberry Bellavitano

A table favorite at our markets, some argue it as a cheddar/parm mixture or a younger asiago. Whatever your taster decides the immersion of the wheels in a raspberry tart ale gives this cheese the extra explosion of flavor that makes you have that sigh and eyes roll back into your head movement the first time you enjoy. Raspberry BellaVitano is a perfect table cheese for serving at your next party. Pair this cheese with sherry, Riesling, or a light Italian red or if you prefer beer, try Belgian sour browns or Porter.

Blue Affinee

Buttermilk Blue Affinee is made by Emmi Roth in Monroe, Wisconsin. The finest of the buttermilk blue cheese is chosen and cured for a minimum of 6 months. When it comes to blue cheeses this is one of the creamiest and strongest. It has a peculiar piquant and earthy flavor. It is perfect for burger topping or salad dressing and pairs well with Port, Cabernet Sauvignon, and Amarone.
