For our markets up north they are made weekly for the markets. So to get the closest to the squeak that you remember, we do freeze them the day they are made and thaw before the markets here in Florida. So even though they are frozen, they still have a slight squeak at room temp and a Wisconsin snowbird taught me that if you put your portion in the microwave for 9 seconds they taste like the day they were made. Like all curds even in Wisconsin, you should finish them in a week and a half.
